Caramel

Ingredients

225g sugar

135g butter

225g heavy cream

1/2g of baking soda

1g salt

(Use a high heat spatula)


Instructions

  1. Pre heat cream and set aside.

  2. In a medium size pot pour a small amount of sugar into the pot.

  3. Wait until the small amount of sugar in melted and clear. Then keep adding small amounts and letting it melt

  4. Once all of the sugar is used add butter and mix until it is well incorporated and smooth.

  5. Take pot of stove top and add the warm cream in to the pot in three parts mixing between each part.

  6. Add baking soda and salt.

  7. Put pot back on stove and heat to 120c or until bubbles become slow popping.

  8. Pour into lined pan and let set over night. cut and serve.
