Cinnamon S'more Cookies

Ingredients

940g all purpose flour

8g baking powder

8g baking soda

8g cinnamon

8g salt

460g butter

380g sugar

300g honey

20g vanilla

(marshmallow and chocolate ganache)


Instructions

  1. Combine and cream the butter, sugar, honey and vanilla extract.

  2. Combine and sift the all purpose flour, baking powder, baking soda, cinnamon and salt.

  3. Add the dry ingredients to the butter mixture and mix until combined.

  4. Wrap the dough and rest it for a minimum of 30 minutes.

  5. Roll the dough out to 1/8in/.3cm and dock before baking.

  6. Bake: convection; 350F/176C; 10min

  7. Let cool then sandwich two cookies together with marshmallow and chocolate ganache (or what ever else you want).
