Crepe Cake

Ingredient For Crepe

240g flour

100g sugar

1g salt

200g whole egg

60g egg yolk

520g milk

1g vanilla


Ingredients For Pastry Cream

70g milk1

175g milk2

67g sugar

1g vanilla

1g salt

15g cornstarch

40g egg yolk

10g butter

470g heavy cream


Instructions

Crepe

  1. Sift flour, salt, and sugar.

  2. Mix whole egg, egg yolk, milk, and vanilla together.

  3. Mix dry and wet ingredients together.

  4. Let sit for 3 to 4 hours

  5. Cook crepes in pan. Make around 20 to 25 crepes.

Pastry Cream

  1. Whisk together sugar, salt, and cornstarch. Then add milk1 and egg yolk.

  2. In a small pot pour milk2 and vanilla. Heat to a simmer.

  3. Slowly pour heated milk and vanilla into other mix. Put back on heat and stir until it thickens.

  4. Cover with plastic wrap to the touch.

  5. Whip heavy cream and sugar till it form peaks.

  6. Fold whipped cream and milk-egg mix together.

  7. Layer crepes and cream. Then serve.
