Lemon Poppyseed Cake

This is my favorite recipe.

Ingredients

3 eggs

225g sugar

120g heavy cream

70g butter

1tbsp poppy seeds

1tbsp lemon zest

170 all purpose flour

1.25tsp baking powder

1g salt

(Glaze is 90g powdered sugar with 2tbsp lemon juice mixed together.)


Instructions

  1. Pre heat oven to 350f. Grease and line bread pan.

  2. Beat eggs and sugar on medium-high speed using a stand mixer.

  3. While you beat eggs and sugar melt butter and zest in a small pot.

  4. Sift flour, baking powder and salt together. fold in egg mixture.

  5. Add poppy seed and but mix.

  6. Pour into pre lined pan.

  7. Bake for 40 to 50 minutes

  8. Take out of oven and pour glaze on with cake is still hot.

  9. Let cool completely. Cut and serve.
