Ingredients

454g sugar

175g water1

40g gelatin

175g water2

5g vanilla

60g egg whites

food coloring and flavor are optional


Instructions

  1. Line a pan with parchment paper and 50/50 cornstarch and powdered sugar.

  2. Heat sugar and water1 to 126c.while this happens start beating egg whites on medium slow.

  3. Soften gelatin with water2.

  4. Melt gelatin in sugar syrup.

  5. Add syrup slowly to soft beaten egg whites.

  6. Continue beating until the mixture is stiff enough to hold its own shape.

  7. Pour mix into pan and let set over night.

  8. Cover top with 50/50 mix of cornstarch and powdered sugar. Then cut and cover all sides.
